Ingredients
Basmati rice-2cups, onion (large)-1(finely chopped), cashew nuts-1/4cup(fried), bay leaves-2, whole garam masals-1tbsp, frozen chopped vegetables (carrots, green peas and beans)-2tbsps, chicken pieces-1cup, soy sauce-1tbsp, white vinegar-1tbsp or to taste, freshly crushed black pepperr-1/2tsp, clarified butter or oil, salt and sugar (optional) to taste.
Cooking Method
Step 1. Marinate the chicken pieces with soy sauce , vinegar and pepper. Keep in refrigerator for 30 minutes.
Step 2. Wash rice. Cook with water, salt, whole garam masala and 1tbsp clarified butter till done. Remove.
Step 3. Heat clarified butter/oil and season with bay leaves and whole garam masala . add onion stir-fry till golden brown. Add marinated chicken and cook over high heat for 1 minute. add frozen vegetables and stir a little. add rice, cashew nuts and season with salt and sugar. Mix well.
Step 4. Remove from heat and serve hot.
Notes / Special Remarks
Can use crushed chicken stock cube instead of salt on step4.
