Ingredients
Basmati rice-3 rice cups, salt to taste, oil-3tbsps, dry red chilies-2; broken into pieces, black mustard seeds-1tsp, cashew nuts-10, raisins-10, finely chopped ginger-15gms, turmeric powder-1/4tsp, lemon juice to taste, a handful of chopped green coriander and 2-3tbsps fried onion.
Cooking Method
Step 1. Wash rice and cook along with salt till done.
Step 2. Heat oil and add red chilies and mustard. Let them crackle.
Step 3. Add finely chopped ginger, then turmeric, cashewnut and raisins. Stir-fry a little.
Step 4. Add to the cooked rice. Fold gently. Add little lemon juice (optional). Keep covered for 10 to 15 minutes. Decorate with fried onion and coriander. Serve hot.
