Egg Roll

Fried egg wrapped inside a paratha or chapati (flat-bread) and is also known as a kati roll. Egg rolls make a great snack, appetizer, or addition to a meal. (This recipe makes the thicker egg roll that is popular in western Chinese restaurants too.

Ingredients

Fine flour (maida)-1 1/2cups, salt to taste, water-1/2cup or as required, oil-1tbsp+for shallow frying, egg(LL size)-3, freshly crushed black pepper-1/4tsp, sliced red onion-5tbsps, julienned cucumber-5tbsps, tomato ketchup and chili sauce as required.


Cooking Method

Step 1.  Put maida, 1tbsp oil, salt and water in a food processor and make and smooth dough. Brush the dough with 1/2tsp oil and divide into 3 equal portions. Keep covered.

Step 2.  Roll each into a thin round, the size of a snack plate. Heat a griddle (tawa) and place one round on it. Cook for few seconds. Turn over and brush with little oil. Similarly cook on the other side. Remove from griddle.

Step 3.  In a small bowl, break one egg, add crushed pepper and little salt. Beat well. Heat the griddle again and brush with 1tbsp oil. Spread the beaten egg on the griddle and put one paratha over it. Lightly press with a spatula. Flip over again and roast it till it is golden in color.

Step 4.  Remove from tawa and put the paratha (egg side up) on a kitchen towel.

Step 5.  Spread sliced onion and cucumber over it. Add tomato ketchup and chili sauce to your taste. Now roll it carefully and serve immediately. You can wrap the roll with butter pepper.


Notes / Special Remarks

A) Can add 1egg on step1. B) Can add grated carrots or cabbage along with onion and cucumber.
