Ingredients
Mutton 1kg, FOR MARINATING: yogurt-115gms; beaten, kashmiri chilly powder-1 1/2tsps, turmeric powder-1tsp, salt to taste, oil-1tbsp. OTHER INGREDIENTS: baby potatoes-6; peeled and fried, oil-6tbsps or as required, bay leaves-3, black cardamoms-4, green cardamoms-4, cinnamon stick-1, cloves-5, sliced onion-400gms,ginger; finely chopped-25gms, garlic; finely chopped-45gms, coriander-3tsp, cumin powder-2tsp, grated ginger -10gms, grated garlic-20gms, sliced tomato-200gms, freshly crushed black pepper-1 1/4tsps, garam masala powder-1tsp, mace and nutmeg to taste, water-200cc.
Cooking Method
Step 1. Mix all the ingredients listed under FOR MARINATING¡¦and marinate the mutton pieces with this mixture. Keep aside for 2 hours.
Step 2. Heat oil and season with black cardamoms, green cardamoms, cinnamon, cloves, bay leaves and 1tsp sugar (optional). Let them brown. Add onion and fry till golden brown in color.
Step 3. Add chopped ginger, garlic and marinated mutton. Fry well over high heat till the mutton is well browned.
Step 4. Add coriander powder, cumin powder along with grated ginger and garlic. Cook well till oil floats. Add tomatoes and cook for further 2 minutes. Add water and potatoes and pressure cook to give 2 whistles or till the meat is tender.
Step 5. Open the lid and cook the mutton over high heat. Add black pepper and garam masala powder and cook till all the water evaporates. When oil starts floating on top add mace and nutmeg powder and stir well. Cook for another minute. Serve with ROTI or RICE or LUCHI.
